Built on the classic collins structure, this long drink takes its inspiration from warming flavors of the season. Floral pear juice and St-Germain are layered over a base of cognac, lightened up with citrus, and evened out with spiced honey syrup.


2 ounces vodka or gin
1/2 ounce St-Germain
1 tsp pear liqueur
1 ounce pear puree
3/4 ounce fresh lemon juice
1/2 ounce honey syrup
club soda, to top
Thin slice of pear
Grated cinnamon


Add all ingredients except club soda to a shaker with ice and shake until well-chilled.
Strain into a Collins glass over fresh ice.
Top with the club soda and stir briefly to combine.
Garnish with a thin slice of pear and grated cinnamon.
