One of my favourite parts about summer is a weekend BBQ with friends and family. While I don’t usually jump at the opportunity of being the grill master, I always love bringing a side salad that I know everyone will enjoy with their burger or hotdog. Since I can usually count on someone to bring a potato salad or coleslaw, I tend to lean more towards a lighter, fresher salad.
This easy recipe is fool-proof, and incorporates some local produce that is always a hit. Bermuda tomatoes are big and juicy, and provide some great nutrients such as potassium, which reduces the risk of cardiovascular disease, and lycopene, which helps skin against sun damage. Cucumbers add a nice crunch next to the tomatoes, and provide a lot of water content, which helps your body stay hydrated in the summer heat!
Ingredients (Serves 4):
1 large tomato
1 English seedless cucumber
1/2 red onion (or Bermuda onion)
2 tbsp. capers
1 tbsp. olive oil
1/4 lemon
Salt and pepper
Directions:
Cut the tomatoes, cucumbers and onions in to desired sized slices. Lay the tomatoes on to your serving platter, then top with the cucumber slices, followed by the onions.
Sprinkles the capers on top.
Drizzle the olive oil all over, along with the lemon juice and salt and pepper to taste.
