I have been making this smoothie recipe for breakfast or as a snack almost daily for over two months now because it is DELICIOUS. This recipe combines my favourite combination – chocolate and peanut butter. It does not require any fruit, not for any particular reason except that it just doesn’t need it! The secret ingredient to this smoothie is frozen cauliflower. Cauliflower is often an over-looked vegetable because it lacks flavor and is usually quite bland (unless it’s mashed with a stick of butter or baked and served with sour cream and cheese). But that’s why it’s perfect in a smoothie – it doesn’t change the taste or colour, and when frozen it makes the smoothie perfectly cold, thick and creamy.

Cauliflower also serves some great nutritional value. It’s high in fiber, which will help you feel full for longer, it’s a good source of antioxidants, which can reduce inflammation, and it’s high in choline, a nutrient involved in many body processes and works to prevent a number of illnesses. So, by adding a cup of cauliflower to your smoothie, you will hardly notice a difference in taste but your body will be reaping a lot of healthy benefits!

 

Ingredients (serves 1):
1 cup nut milk (I use cashew)
4-6 oz frozen cauliflower
2 scoops chocolate protein powder
1 tbsp raw cacao powder
2 tbsp of peanut butter powder (or a nut butter of your choice)

 

Directions:

  1. Fill your blender in the order the ingredients are listed above. Depending on the frozen cauliflower and the power of your blender, I would suggest letting the ingredients sit in the blender for a few minutes to soften.
  2. Blend together for 3-5 minutes or until smooth and creamy. If your protein powder is not very sweet, I would suggest adding a tsp of honey or your sweetener of choice.
