How to Craft the Ultimate Charcuterie with Citterio
While charcuterie (pronounced shar-COO-tur-ree) technically refers only to a selection of cold cooked meats, it’s usually inclusive of a broad supporting cast of cheeses, spreads, crackers, nuts, and produce. The best aspect of charcuterie boards is the flexibility they afford: Scale portions up or down depending on the number of guests, adjust ingredients for dietary needs and preferences, or shop for foods within a specific color palette or region.
Step 1: Add Structure
Fill small bowls with hummus, sauces, honey, and jams, and place them at different spots on your board. Fill additional bowls with a variety of nuts, gherkins, olives and place on board.
Step 2: Add Citterio Meats and Cheeses
First, lay down the cheeses, arranging them around the board while leaving space for slicing and scooping. You can use whichever varieties of cheeses you prefer but Brie, blue cheese, aged cheddar and goats cheese are always good picks. Next, add Citterio meats– prosciutto and Italian salami are most popular for a charcuterie. It’s okay if the meats and cheeses are touching, they’re meant to be enjoyed together.
Step 3: Add Crackers
Add two or three stacks of crackers or pita breads to the spread. You can let them topple over and look a bit messy, it’s not supposed to look perfect.
Step 4: Add Fruits, Veggies and Herbs
This is the final step! Fill gaps with whole radishes, sliced figs, grapes, apricots, cherries, fresh thyme, basil and cherry tomatoes to decorate your board but also add extra flavors and textures. And that’s it: dig in!
