Pesto & Arugula Grilled Cheese

Ingredients:
(makes 2 sandwiches)
4 slices whole-wheat sourdough
4 tsp butter
2 tbsp pesto
3 ounces thinly sliced Cabot Sharp Cheddar
1 ½ cups baby arugula

Directions:
Spread butter over bread slices. Turn over and spread pesto on two bread slices. Top the other two slices of bread with cheese.
Place cheese-covered bread slices on a large non-stick skillet over medium-low heat. Cook sandwiches open-faced in two batches, about 5-8 minutes.
Add arugula on top of melted cheese. Close sandwich and cut in half, serve hot.

 

 

Vermont Grilled Cheese Sandwich

Ingredients:
1 tbsp butter
4 slices whole-wheat bread
4 ounces Cabot Seriously Sharp Cheddar, sliced
6 slices of bacon, cooked until crisp
2 tsp maple syrup

Directions:
Melt butter in large skillet over medium-low heat. Top two bread slices with cheese and bacon. Drizzle maple syrup and add top bread slices. Move to a skillet and cook slowly until golden on both sides.

 

 

California Classic Grilled Cheese

Ingredients:
1 tbsp butter
4 slices sourdough
4 ounces Cabot Pepper Jack cheese, sliced
6 slices of tomato
½ avocado, sliced

Directions:
Melt butter in large skillet over medium-high heat. Cover two bread slices with cheese, tomato and avocado. Add top bread slices. Move to skillet and cook slowly until golden and cheese is melted.

 

 

Ultimate Spicy Grilled Cheese

Ingredients:
2 slices sourdough
5 ounces (about 1¼ cups) Cabot Pepper Jack cheese, shredded
2 tbsp finely chopped jalapeno
4-6 thin jalapeño slices, to taste
1 tbsp finely chopped green onions
6 jalapeno-flavored potato chips, crushed

Directions:
Make the cheese crust: place 2-4 jalapeño slices in the skillet where bread will go, top with ¼ cup Cabot Pepper Jack Cheese and shape to size of bread. Place bread on top of cheese and press down.
Top bread with ¾ cup Cabot Pepper Jack Cheese, chopped jalapeno, green onions and potato chips. Cover with second slice of bread.
Remove sandwich from pan and place remaining jalapeno slices and Pepper Jack cheese in skillet. Place sandwich on top of cheese, pressing down lightly. Cook for 3-5 minutes. Remove from pan, let rest for 1 minute. Serve.
