1/2 cup butter, softened
1/4 cup old fashioned oats
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Pinch kosher salt
Ice cream, for serving
Preheat oven to 375°. Core apples with a melon baller without cutting through the bottom.
In a medium bowl mix together butter, oats, brown sugar, pecans, cinnamon, nutmeg, and salt.
Stuff butter mixture evenly into each apple.
Place apples in a small baking dish and cover with aluminum foil. Bake for 30 minutes and then remove foil.
Continue baking until apples are tender and the insides are syrupy, another 20 minutes. Serve warm with ice cream, if desired.
