Move over banana bread, these traditional Bermudian treats are crunchy, delicious and can be served as breakfast or dessert. 

Ingredients 
1/2 cup flour

3/4 teaspoon baking powder

1/4 teaspoon salt

confectioners’ sugar

1 tablesspoon sugar

1 egg yolk

6 bananas

Whipped cream (optional)

Directions 
Using a sieve, sift flour, baking powder, salt and sugar together in a large bowl. In a small bowl, add the milk to the egg yolk and beat lightly until combined. Add the milk and egg mixture to the dry ingredients and mix until a smooth batter forms. Slice bananas in half lenghtwise. Dip in the batter and fry in neutral oil (sunflower or vegetable) at 390F until crisp and golden brown. Serve warm with a sprinkle of confectioner’s sugar and whipped cream.
