A harmonious blend of ripe bananas, tropical sweetness and a hint of spice, Mrs Smith’s chutney recipe is a unique and notable delight.
Recipe by Mrs A.B. Smith, taken from Bermuda’s Best Recipes 13th edition printed in 1986
Ingredients:
1 lb chopped Bermuda onions
6 bananas put through a ricer
3/4 lb chopped dates
2 cup fruit syrup
1 1/2 cup vinegar
1/4 cup lb crystallised ginger
1/2 lb raisins
Directions:
To the onions, dates, bananas, add 1 1/2 cup vinegar and simmer 20 minutes. Add chopped ginger, 1 teaspoon each salt and curry powder, raisins and syrup from any canned fruit. Cook until thick. Makes about 2 quarts.
Bermuda’s Best Recipes was first published with 1,000 copies in 1934. A compilation of contributed recipes from Bermudian women, the legendary cookbook continued to be published regularly for many years and in 1986, the 13th edition printed a whopping 15,000 copies. The proceeds went to Warwick Parish to fund many charitable initiatives.
