A simple side for a picnic or barbecue. Bermuda onions sliced paper thin and tossed with a cool buttermilk dressing.

Ingredients:

2 Bermuda onions
Buttermilk dressing

For Buttermilk Dressing:

½ cup of buttermilk
½ cup of mayonnaise
2 tbsp of citrus champagne vinegar or similar
2 tsp celery seeds
½ tsp salt
Lots of freshly cracked black pepper
Dill, parsley, thyme or chive (for garnishing)

Directions:

Peel and slice onions into ⅛ in. slices, best done on a mandolin slicer. Cut the slices in half or thirds.
Put onions into a bowl, carefully separating strands as you add them.
Whisk together the dressing & be sure to taste to adjust any ingredients.
Pour enough dressing over the onions to saturate them, but don’t drown them. Toss well & refrigerate for several hours before serving.
Garnish with just a bit of green before serving, either with your dill, parsley, thyme or chives.
