Recipe by Mrs. P W White, taken from Bermuda’s Best Recipes 13th edition printed in 1986

1 1/2 cups sifted flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup bran
1/2 cup chopped nuts
1/4 cup shortening
1/2 cup sugar
1 egg
1 tsp vanilla
1 1/2 cup mashed bananas
2 tbsp water

Mix and sift well dry ingredients; stir in bran and nuts. Cream shortening and egg, sugar and vanilla and beat until light. Add dry ingredients alternately with mixture of bananas and water, stirring well after each addition. Turn into greased loaf pan and bake in a moderate oven for 40 to 50 minutes. Cool thoroughly before cutting.

Bermuda’s Best Recipes was first published with 1000 copies in 1934. A compilation of contributed recipes from Bermudian women, the legendary cookbook continued to be published regularly for many years and in 1986, the 13th edition printed a whopping 15,000 copies. The proceeds went to Warwick Parish to fund many charitable initiatives.
