Instead of traditional macaroni and cheese,  carrot mac ‘n’ cheese makes a great healthy alternative. With fewer calories, more nutrition and a great taste, your family will love it.

 

Ingredients:

1 bag of Bermuda carrots

1 orange

2 cups water

Box of pasta of your choice

2 cups shredded cheese

 

 

Directions:

Preheat oven to 350°F.

Steam and finely sliced Bermuda carrots with the zest strips and juice of one orange and 2 cups of water until very soft (about 30 minutes).

Remove orange peel and blend to a smooth purée.

Meanwhile, cook and drain a box of pasta of your choice (we like whole wheat penne), saving a cup of the cooking liquid.

Transfer pasta back to the pot and add the puréed carrots and 1 1/2 cups of shredded cheddar cheese.

Stir until cheese is melted (add in cooking liquid as needed). Transfer to a baking dish, top with another 1/cup cheese and bake at 350°F for 20 minutes.
