A fun twist on a simple summertime soup, the perfect refreshing reprieve on a hot afternoon or evening. 


1½ – 2 lbs. tomatoes, chopped
1 ½ cup plain yogurt
¼ cup fresh basil leaves
¼ cup extra virgin olive oil
2 garlic cloves, chopped
1 small yellow onion, chopped
1 ½ tsp. red wine vinegar
2 ice cubes
2 tsp. Salt
Pepper to taste
Pinch red pepper flakes (optional)
Croutons (optional) 


In a blender, purée tomatoes, yogurt, olive oil, garlic, onion, basil, ice cubes, vinegar, red pepper flakes, salt and pepper. Pour into bowls and top with a drizzle of olive oil and basil, or croutons.
