Today is National Prosecco Day! Enjoy this delicious summery spin on a classic bellini.
1 cup peach juice
2 fresh peaches, pitted, peeled, and diced
1 bottle Prosecco
Tip: blend in two batches because it all won’t fit in a blender at once!
Pour half of the peach juice, 1 peach, lots of ice and half of the bottle of Prosecco into the blender.
Blend, pour out, drink and then repeat with the remaining half. Garnish with a slice of fresh peach if desired.
