Nothing says summer quite like a simple salad with grilled peaches and creamy burrata. The saltiness of the prosciutto pairs perfectly with the sweet tang of the peach, and is sure to be a hit at any dinner party!
3 peaches, cut into ¾ inch wedges
2 ounces prosciutto, torn into strips
8 ounces burrata cheese, cut into pieces
4 cups mixed greens
6-8 basil leaves
3 tbsp. olive oil
2 tbsp. balsamic vinegar
Pinch of salt
Freshly ground black pepper
Brush peaches with olive oil (about 1 tbsp.) and grill for 4-5 minutes. Flip and continue for another 4-5 minutes. Remove and set aside. In a large, shallow bowl, add mixed greens. Place prosciutto slices, burrata cheese pieces and basil on top. Drizzle remaining olive oil and balsamic vinegar over the salad, mix, and season with salt and pepper to taste. Simple and easy!
