Ingredients:
Non-stick spray
3 large sweet potatoes
1 cup pomegranate arils
1/2 cup orange juice
1/4 cup maple syrup
3/4 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/3 cup chopped pecans
2 tablespoons brown sugar
Directions:
Peel sweet potatoes, then cut them into 1/2-inch medallions. Set aside.
Extract arils from pomegranate.
Create the sauce by combining orange juice, maple syrup, salt and spices. Whisk together and set aside.
Spray the bottom of a 9×13 baking dish with non-stick spray. Begin with a layer of sweet potato on the bottom. Top with a layer of pomegranate arils and then a layer of sauce. Continue layering until all the ingredients are used.
Cover with tin foil and bake in a 400 degree oven for 35 minutes.
Remove tin foil and add chopped pecans and brown sugar to the top of the bake.
Bake for another 15 minutes or until the brown sugar has caramelized.
Remove from oven and serve immediately.
