A simply delicious summer side when there is an abundance of tomatoes at the market or in your garden.

8 Bermuda tomatoes
¼ cup parsley, finely chopped
1 clove garlic, mashed
1 tsp salt
1 tsp sugar
¼ tsp pepper
½ cup oil
2 tbs tarragon vinegar
2 tsps dijon mustard

Slice tomatoes thickly. In a bowl mix the rest of ingredients well and pour
over the tomatoes.
