A refreshing treat that combines the zesty citrus flavour of lime with the cool, invigorating taste of mint. This recipe also serves as the perfect palate cleanser between courses.

10 springs fresh mint
2 cup water
3/4 cup sugar
1/2 cup white corn syrup
2 tsp grated lime rind
1/2 cup lime juice
2 drops green food colouring
2 egg whites, stuffy beaten

Wash, dry and chop mint leaves picked from the stems.
Add water and sugar.
Bring to boil.
Stir until sugar dissolves.
Cool and strain.
Add corn syrup, lime rind and juice.
Add colouring
Freeze in refrigerator tray until firm.
Remove from mixing bowl, break up mixture and beat with electric beater until mushy and smooth,
Fold in the egg whites and freeze until firm.
