Ingredients:
1 cup ice
1/2 cup gin
1 1/2 cups tonic water
Loquat juice (see below for directions on how to juice loquats without a juicer)
Good grinding of black pepper
2 sprigs of mint
Directions:
Add the ice to two glasses and then pour over the gin.
Pour over the tonic water and loquat juice and garnish each glass with a loquat or two and a good grinding of black pepper and a sprig of mint.
How to Juice Loquats without a Juicer
Add two handfuls of loquats (peeled and pitted) to a blender with a large piece of fresh ginger (no need to peel). Blend the loquats and ginger into a puree. Place a fine mesh sieve on top of a jug and line with a cheesecloth. Pour the loquat and ginger puree and using the back of a spoon or a pestle stir the puree. When most juice has filtered into the jug, gather all sides of the cheesecloth and twist into a ball; gently squeeze all the juice out. Once you have extracted as much of the juice, add sugar, honey or any other sweetener of your choice or leave the juice in its natural state if that’s what you prefer. Chill in the refrigerator before using.
