Louise Jackson MBE, JP, MP shares with us her delicious recipe for Baked Honey Shrimp, which she serves as an hors d’oeuvre at parties.
Baked Honey Shrimp
Ingredients:
2 tablespoon chopped fresh parsley
1 tablespoon grated lemon zest
Juice of two lemons
Olive oil
Soy Sace
Honey
Cajun Seasoning
Ground Red Pepper
2-lbs large shrimp
Sliced French Bread
Mix together in a small bowl:
1 tablespoon chopped fresh parsley and 1 teaspoon grated lemon zest
Cover and refrigerate until ready to use.
Whisk together in a medium bowl:
Juice of two lemons
1/2 cup olive oil
2 tablespoonof soy sauce
2 tablespons honey
2 tablespoons Cajun seasoning
1 tablespoon chopped fresh parsley
1/4 teaspoon ground red pepper
Add to the medium bowl
2 pounds large shrimp peeled and deveined
Toss well in the dressing, cover and let marinate in the refrigerator for an hour
Preheat oven to 450 degrees F.
Transfer shrimp to baking pan and bake until firm, 8-10 minutes
Sprinke shrimp with lemonzest and parsley mixture and serve with sliced French bread.
