Easy and versatile, this simple summer slaw recipe is the perfect complement to your barbecue fare. Serve it as a side or a salad, switching up the vegetables with the season.
½ cucumber, cut or peeled into thin strips
1 mango, peeled and sliced in thin strips
1 cup red cabbage, shredded
1 cup napa cabbage, shredded
¼ red onion, thinly sliced
½ red bell pepper, thinly sliced
1 carrot, shredded
Mint or cilantro, chopped
2 tbsp. lime juice
1 tbsp. rice vinegar
1 tbsp. sweet chili sauce
½ tbsp. honey
Salt to taste
Whisk together your wet ingredients in a small bowl. Thinly slice your vegetables and herbs and add them to a separate bowl. Pour dressing over and mix. All done!
