Makes about 70
Ingredients:
1 cup of sugar
1 cup margarine or butter
2 cups of flour
1 egg
1 teaspoon of baking powder
Pinch of salt
1 teaspoon of vanilla
1 teaspoon of almond essence
Nutmeg
Glazed cherries for decorating
Directions:
Cream butter and sugar, add beaten egg, sift in the flour, baking powder and salt, add flavours and cool in the fridge.
Drop one level teaspoonful in a ball onto a non stick baking sheet and press VERY flat. (Use a glass with a very flat bottom greased with ‘pam’ and lightly dipped in flour so there is no sticking).
Cut halves of glazed cherries and place in the centre of the cookies.
Bake at 300-350F in the centre of a preheated oven for approx. 10 mins or until they are lightly tanned. Lift off the sheet quickly so they don’t get stuck and cool on a wire wrack.
