3 inch ginger, grated
2 limes, juiced
12 or so fresh mint leaves
2 tbsp honey
4 cup water or sparkling water, or mix
Skin the cucumbers with a vegetable peeler. If you want to use the skin or slices as a garnish, reserve some of the pieces.
Clap the mint leaves together in your hands 3-4 times to release the oils and scent.
Muddle the cucumber, the fresh ginger, fresh mint, lime juice, and honey with the water.
Use a strainer to strain the solids when pouring over each glass, discard the solids.
Add ice into glasses and strain the drink into the glasses.
Pour a splash of club soda over the top.
Garnish with your choice of lime wheels, ginger, cucumber or mint and serve.
