More than just a pretty blossom, nasturtiums are packed with nutrition, containing high levels of vitamin C which can have positive effects on the immune system, helping to tackle sore throats, coughs, and colds, as well as bacterial and fungal infections.
Ingredients:
1/2 cup flaked almonds
1 cup of nasturtium flowers
1 cup nasturtium leaves
1 clove minced garlic
1/4 cup grated parmesan
Salt and pepper to taste
Extra virgin olive oil
Directions:
Toast the flaked almonds in dry pan for 1 minute till golden and aromatic then remove from pan immediately and allow to cool
Blend all ingredients in food processor, drizzling in the oil until you have the consistency you desire.
Use pesto to top pasta, pizza, spread on sandwiches or use as a dip for vegetables or crackers.
