This delicious—and extremely easy—combination of tart raspberries and sweet cream makes a beautiful and fun dessert for any occasion, although we recommend it as a perfect April Fool’s Day treat to make up for that awful prank you pulled earlier!
Ingredients:
2 1/4 cups fresh raspberries
1/4 cup plus 1 tbsp. sugar
1 tbsp. raspberry liqueur (optional)
1/2 pint heavy whipping cream
Directions:
1. In a blender or food processor, purée 1 1/2 cups of the raspberries, 1 tbsp. sugar and the liqueur, if using. Run the purée through a strainer to take out the seeds. Set aside.
2. In a large bowl, whip cream with remaining sugar using a mixer or whisk until firm peaks form. With a spatula, gently fold in raspberry-liqueur mixture, but don’t mix too well: you’ll want to leave swirls of raspberry in the cream. Divide mixture among four dessert glasses or bowls and top with remaining fresh raspberries. Serve immediately or cover and chill for up to 2 hours.
