Cheers to the weekend and the end of Shelter in Place.


For the Rosemary Simple Syrup
1/2 cup sugar
1/2 cup water
1 sprig fresh rosemary

For the Cocktail
1/2 oz Rosemary Simple Syrup
1/2 oz fresh lemon juice
2 oz gin
3 oz club soda
Sprig of rosemary and lemon slices for garnish



For the Rosemary Simple Syrup
Bring water and sugar to a boil in a small saucepan.
Stir while boiling until sugar is completely dissolved. Remove from heat.

Add rosemary sprig and allow to steep for one hour while cooling. Remove rosemary before using.

For the Cocktail
In a cocktail shaker filled with ice, add rosemary simple syrup, lemon juice and gin.
Shake vigorously and strain into an ice-filled glass.
Add soda water and garnish with lemon slice and rosemary sprig.
