Swiss Chicken
Ingredients:
4 chicken breasts
1 half package swiss cheese
1 egg
1 tbsp water
1 half stick margarine at room temperature
1/4 tsp. rosemary leaves (crushed)
1 bag crushed potato chips
Salt
Pepper
Directions:
Flatten chicken and salt and pepper. Wrap chicken around cheese secure with round end toothpicks. Dip in beaten egg and water. Roll in crushed potato chips. Put in lightly greased baking pan. Cream margarine and add the Rosemary to it. Dot the chicken with the margarine. Cover in foil. Bake at 350 degrees for 45 minutes covered and then uncover and bake 20 minutes longer.
Spinach Casserole
Ingredients:
1 + 1/2 tsp. butter
Three packages of frozen chopped spinach, cooked and drained
5 eggs, slightly beaten
3/4-lb. cottage cheese
1 + 1/2 tsp flour
3/4-cup finely diced American cheese
1 + 1/2 tsp. salt
3/4 tsp. pepper
1/2 tsp. onion powder
1/2 tsp. nutmeg
Melt butter in two quart casserole dish. Combine remaining ingredients and place in casserole. Bake at 325 degrees for 45 minutes.
Malted Milk Rounds
Ingredients:
4 cups all-purpose flour
3/4- cup malted milk flour
2 tsp. baking powder
1/2 tsp. soda*
1/2 tsp. salt
1 cup butter
2 cups brown sugar
2 eggs
1/3 cup sour cream
2 tsp. vanilla
Malt frosting
Blend first five ingredients thoroughly. Cream butter; gradually add sugar. Blend in eggs; beat well. Add half the blended dry ingredients; mix thoroughly. Add sour cream and vanilla; stir in remaining dry ingredients. Chill at least 4 hours.
Heat oven to 375 degrees. Divide dough and roll 1/4″ thick on well floured cutting board. Cut with 2 1/2″ cutter. Bake 12 to 15 minutes on ungreased baking sheet. Cool. Frost tops with frosting.
*If using self-rising flour then omit soda and salt.
Malt Frosting
Ingredients:
1/2 cup brown sugar
1/4 cup butter
1/4 cup milk
1/3 cup malted milk powder
1/2 tsp. vanilla
3 cups sifted confectioners sugar
Cook brown sugar, butter and milk in saucepan until sugar is melted. Remove from heat; stir in malted milk powder and vanilla. Blend in confectioners sugar gradually until you reach right consistency.
