Yields: 8 portions


4 cups cooked sweet potatoes
¾ cup brown sugar
2 eggs
2 tablespoons butter
1 tablespoon Crisco
½ cup milk
¼ teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
2 tablespoons raisins
Few drops of vanilla


Cream butter, Crisco and sugar; add eggs and mix in well. Mix together mashed potatoes, salt, cinnamon and baking powder.

Add the potato mixture with the sugar mixture and mix well. Gradually incorporate milk into the potato mixture; add the vanilla and the raisins.

Grease a two-by-eight-inch baking pan or dish and pour mixture into the greased container. Bake in a moderate hot oven (350 degrees) for about one hour or until done.
