Once, Bermudians celebrated the Guy Fawkes Day on November 5 more than they did Halloween on October 31. Sweet potato treats were especially enjoyed on that day, along with fireworks and sparklers. These days, Halloween is the preferred occasion for celebrating; in addition, many Bermudians like to commemorate Thanksgiving. But sweet potatoes are also significant for these events, and of course, pumpkins and squash are fall favorites.
Ingredients (Yields 8 portions):
4 cups cooked sweet potatoes
3/4 cup brown sugar
2 eggs
2 tablespoons butter
1 tablespoon Crisco
1/2 cup milk
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
2 tablespoons raisins
Few drops vanilla
Directions:
Cream butter, Crisco and sugar; add eggs and mix in well.
Mix together mashed potatoes, salt, cinnamon and baking powder. Add the potato mixture with the sugar mixture and mix well.
Gradually incorporate milk into the potato mixture; add the vanilla and raisins. Grease a two-by-eight-inch baking pan or dish and pour mixture into the greased container.
Bake in a moderate hot oven (350 degrees) for about one hour or until done.
