Power up your weekend breakfast with an herby egg perfectly cooked inside a slice of bread! Bonus point if you add homemade salsa, sliced avocado or BermyFresh microgreens!
1 tbsp extra-virgin olive oil
2 slices whole-grain bread
2 large eggs
Salt and pepper
Preheat oven to 400˚F. Using 2 ½-inch cookie cutter, cut hole in the centre of each slice of bread. Reserve cutouts. Lightly brush cookie sheet, cutouts and one slice of bread with olive oil. Place bread, olive oil side up, on cookie sheet and bake for five minutes. Flip each piece, then break 1 egg into each hole. Sprinkle eggs with salt, pepper and a little tarragon, and bake 5-7 minutes until eggs are set.
In addition: Use the toasted cutout bread circles from above and smear with mayonnaise. Place a thick slice of tomato, lightly salted, and two fresh basil leaves between bread slices.
