The St. Regis Bermuda Resort’s Signature Cocktail.

Named for the turquoise bay bordering the resort, this piquant libation sublimely blends Bermuda’s past and present. Along with showcasing native fennel, it incorporates Goslings Black Seal Rum, Outerbridge’s Original Sherry Peppers and a locally made spice mix special to The St. Regis.

1 1/2 oz Goslings Black Seal Rum
4 oz tomato juice
1 tsp local spice mix
2 dashes Outerbridge’s Original Sherry Peppers
1 dash Worcestershire Sauce
1/2 oz lemon juice
1/3 oz olive juice
Fresh fennel (garnish)
Sherry pepper (garnish)
Celery (garnish)
Local spice mix (garnish)

1. Mix tomato juice with spice mix, Outerbridge’s Original Sherry Peppers, olive juice and Worcestershire Sauce.

2. Fill a 30 oz glass goblet with ice cubes and water. Stir to chill the glass, then discard the water. Add the tomato juice mix, lemon juice and Goslings Black Seal Rum. Stir gently until all the ingredients are incorporated and the cocktail is chilled. Add garnishes and serve.
