Bermudians are fond of having tuna salad served on a sugar-iced coffee roll. It may sound strange, but actually, it’s rather tasty (and messy).
1 7 ounce tin of chunk tuna in water or oil
2 (or more) tbsp of mayonnaise
1/2 medium Bermuda onion
1 rib of celery
2 tsp fresh thyme
Salt and pepper to taste
2 warmed coffee rolls, sliced lengthwise
Drain the tuna well and with a fork, blend with the mayonnaise.
Add all the remaining ingredients and mix well.
Adjust seasonings with salt, pepper and Tabasco.
Spread thickly on a warmed coffee roll and enjoy.
