This simple and refreshing summer salad recipe takes all but 10 minutes to prepare and is the perfect go-to on a hot summer evening.
4 cups of watermelon, cubed (about 1 small watermelon)
½ cup red onion, thinly diced
¼ cup fresh mint leaves, roughly chopped
½ cup crumbled feta cheese
1-2 tbsp olive oil
1-2 tablespoons lime or lemon juice
Salt and pepper to taste
(optional – Cucumber slices)
Place watermelon chunks in a large bowl. Add citrus juice, oil, and mint to the bowl. Toss until watermelon is evenly dressed. Season lightly to taste with salt and pepper, then serve!
