Let us celebrate everyone’s favourite summertime fruit with a recipe for delicious watermelon muffins, the perfect accoutrement to an afternoon picnic on the beach.


1 ½ cups flour
2 tsp baking soda
1 tbsp baking powder
A pinch of salt
1/8 tsp cinnamon
6 tbsp unsalted butter, room temperature
2/3 cup sugar
2 eggs
½ cup milk
½ cup watermelon juice
½ watermelon pulp
2 drops red food coloring
½ cup mini chocolate chips


Cream butter and sugar, add the eggs one at a time. Sift together the flour, baking powder, baking soda, salt and cinnamon in a large bowl. Mix in milk, juice, pulp, food coloring and chocolate chips. Add wet mixture to dry ingredients and blend to incorporate. Don’t over work. Fill greased muffin cups two-thirds full and bake for 25 minutes at 350 degrees. Transfer to wire rack to cool.
