Do-It-Yourself Cold Brew
Walnuts are an amazing source of Vitamin E and Omega-3s to boost your immune system while waking you up. Try Elmhurst’s Walnut milk in this super simple at home cold-brew recipe.
Ingredients:
1/3 cup your favourite ground coffee (medium-coarse grind is best)
Elmhurst Walnut Milk
Directions:
The night before, mix your ground coffee and 1 ½ cups of cold water in a jar or container. Cover and let infuse at room temperature overnight or for at least 12 hours.
In the morning, strain through a coffee filter or cheesecloth-lined sieve twice.
In a tall glass with ice, fill halfway with coffee and top with water.
Pour Elmhurst Milked Walnuts Unsweetened Milk over and enjoy!
Whipped Dalgona Coffee
Made famous on TikTok, Dalgona coffee is made by whipping equal parts instant coffee, sugar and water until the mixture is super creamy and before adding milk. It may require some effort to make, but trust us, this one’s worth the hype!
Ingredients:
2 tbsp of instant coffee or espresso powder
2 tbsp of sugar
2 tbsp water
400 ml Elmhurst Oat Milk
Instructions
Combine instant coffee, sugar, and water in a bowl. Using a whisk, whip the coffee mixture until it is light brown, fluffy, and holds stiff peaks – or until it looks like creamy peanut butter.
Next, in a tall glass with ice, add 400ml of Elmhurst Oat Milk.
Carefully, scoop the coffee mixture out of the bowl and add it to your glass, on top of your milk. Once all the coffee mixture has been added, place a straw into your glass and enjoy! Feel free to stir the coffee into the milk all at once, or stir and sip as you go.
Frozen Hazelnut Frappuccino
The perfect Friday afternoon treat!
Ingredients:
½ cup vanilla ice cream
1 ¼ cups Elmhurst Hazelnut Milk, frozen in an ice cube tray
4 ounces strong coffee or some of your homemade cold brew
Whipped cream
Directions:
Add ice cream, frozen Elmhurst Hazelnut Milk, and coffee to a blender. Blend on a high until the ice is crushed and you’ve reached a smooth consistency.
Add mixture to a tall glass and top with whipped cream before serving.
Vegan Whole Wheat Banana Bread Muffins
These delicious banana muffins make WFH a little bit sweeter!
Ingredients:
½ Cup Elmhurst Unsweetened Milked Walnuts™
2 tsp apple cider vinegar
2 ½ cups ripe bananas, mashed
½ cup maple syrup
½ cup coconut oil, melted
2 tsp vanilla
2 cups whole wheat flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
Maple Cinnamon Glaze
1 cup powdered sugar
2 tbsp Elmhurst Unsweetened Milked Walnuts™
1 tbsp maple syrup
1/2 tsp cinnamon
Directions:
Preheat oven to 350 degrees and grease your desired pans. In a small bowl, whisk together Elmhurst Unsweetened Walnut Milk and apple cider vinegar and set aside.
In a large bowl combine mashed bananas, sugar, coconut oil, and vanilla. Add in the walnut milk mixture and mix until fully incorporated.
Add flour, baking soda, salt, and cinnamon to your batter stirring gently until just combined.
Transfer your batter into a muffin tin or loaf pan and add any toppings. For muffins: Bake 12-15 minutes until the top turns a golden brown. For a loaf: Bake for about 1 hour or until top is golden and a toothpick or knife comes out clean.
