Most of those who like to cook become known or ‘famous’ for a dish. Naturally, I bring salads to all the gatherings I go to or, when I host, there is usually a request for this salad which is how this salad got its name. “Please may we have Dijon Greens?”. It’s the simplest salad but I love it because you will without a doubt have all the ingredients and it’s easy to fall in love with. A recipe is not really necessary, but it is helpful to get it right before you are able to remember it off by heart. If you don’t keep frozen peas at the ready, well, you should. Between this recipe and the mint pea dip, it’s a good idea.

 

 

 

Everyday Dijon Greens – (Serves 4)

Ingredients:

About 4 – 5 cups of greens (A blend of spinach and baby kale is my favourite!)
1 box of Bermy Fresh sprouts (broccoli / kale or radish)
½ cup frozen peas (keep frozen until tossing, they will defrost quickly)
½ cucumber, cut down the middle and chopped
¼ red onion, chopped however you like
1/3 cup toasted pine nuts or sunflower seeds
½ avocado, diced
1/3 cup mint, chopped
Pecorino Romano (optional but DELICIOUS!)
2 tbsp. Dijon mustard
3 tbsp. olive oil
4 tbsp. apple cider vinegar
Juice of 1 lemon
1 tbsp. maple or honey
1 garlic clove minced
Salt and pepper

 

Directions:

In a jar, shake all the ingredients together as well as you can.
In a large salad dish, add all the salad ingredients and toss. Toss in the vinaigrette and serve!
