This is an ode to summer as we are reaching the last few weeks. Summer to me is a mix of sweet and salty; salty weekends in the ocean and sweet berries and peaches (or Rum Swizzle….pick your sweet!) This appetizer or dinner side encapsulates it all; grilled salty sheep’s cheese and warm sweet nectarines. Garnish with mint!

 

Ingredients (serves 4):
4 peaches or nectarines, ripe
1 packet of halloumi
Handful of mint
4 skewers

 

Directions:
Slice the peaches into thick wedges, and the halloumi into 1 – 2 inch cubes. The halloumi might be a little crumbly, but should hold up well. Add the peach and halloumi to the skewers and grilled for 2 or so minutes on low – medium heat on the BBQ. Chop the mint to garnish and serve warm as an appetizer or side dish.
*In my opinion, the best halloumi is sheep and goats cheese, but some include cow’s milk. If you have a cow’s milk allergy, read the ingredients carefully.
