This salad is incredibly easy and can be sourced 100% from your local farm. Our home is in Southampton and during the week we head down the road to Wadson’s Farm, ‘our local’, and on Saturday mornings I love to venture round the corner to BermyFresh Farm Market in Wellbottom, and then head toward the other end of the island and hop around the different farms there. Summer may be hot and produce not as abundant, but this is the season for tomatoes, corn, watermelon and great hot weather veg. Watermelons are usually in season mid July and August so keep an eye out at your local farm market or farm stand.

This salad is great for a quick dinner on a  hot summer night or even better to serve as a starter for a dinner or lunch with friends. If you are serving this as a main at supper or lunch, lemon quinoa or fresh Bermuda fish would pair perfectly.

 

Ingredients

1 box of Wadson’s baby lettuce mix
1 English cucumber, spiralized or peel into strips using a vegetable peeler
1 punnet of cherry tomatoes (yellow and red), chopped
2 cups of watermelon, chopped
¼ cup basil, chopped
¼ cup mint, chopped

Organic feta, optional
Thinly sliced red onion, optional
Olive oil, for serving

Simply toss all of the ingredients together with a very light drizzle of olive oil, sea salt and black pepper.
