On Saturday, May 21st The Loren launched their Summer Guest Chef Series. Continuing throughout the season, the series will feature appearances from a number of Michelin-recognized chefs. Each week a different chef will curate their own original menu using season Bermuda ingredients and fresh local seafood. 

Acting as a natural extension of The Loren’s culinary programming – which focuses on forging relationships with local farmers – each of the guest chefs will create their menus using seasonal Bermudian ingredients such as watermelons, pawpaw and corn, as well as freshly caught seafood. The unique menus will be served at The Pink Beach Club, The Loren’s oceanfront all-day restaurant as well as Marée, a comfortable and upscale lounge. The series will also offer engaging and interactive cooking demos. 

The first weekend was all about award-winning chef JJ Johnson who strives to combine culturally-relevant ingredients with classical techniques. Chef JJ has a TV show called “Just Eats” and his restaurant FIELDTRIP was named “Best New Restaurant of the Year” by Esquire Magazine. 

Chef JJ served a remarkable four course meal featuring locally-caught snapper, Bermuda chili and lots coconut.

Collard green salad with cucumbers, red onions, candied cashews in a coconut dressing

Second Course

Mushroom yassa with pistachios, mint, cilantro and Bermuda chili

Third Course

Cornmeal crusted snapper with clams, mussels, baby carrots and Uptown Curry

Fourth Course

Purple sweet potato pie served with coconut ice cream
