At the historic Rosedon Hotel in Pembroke, guests will find Huckleberry Restaurant, a locale that is known for its elegant, yet relaxed setting and its impressive food.

Although the main house of the hotel was built in 1904, the building has since experienced many restorations, the most recent of which resulted in the opening of Huckleberry in 2017.

Promising an intimate experience, the restaurant has two indoor dining rooms in the historic main house, each accommodating 14-16 people. Both the blue room and the green room feature decorative and architectural details of the original house, creating a sophisticated, welcoming atmosphere. Or, for a spacious and inviting al fresco setting, dine on the grand front porch, which is surrounded by “Rosedon Blue” awnings and overlooks the tropical gardens and front lawn. Or, for a truly special experience, request to dine under the stars.

With its recently completed front lawn project, Huckleberry is home to several venues perfect for weddings, anniversary celebrations and corporate events. Choose between two elliptical lawns, terraced rose gardens and a hardscaped entertaining area under the trees. And for smaller gatherings, both the dining rooms in the main house may also be reserved for private events.

Known for it’s “from sea and farm to table” philosophy, Huckleberry celebrates the best that Bermuda has to offer by using only the freshest produce available. Huckleberry’s menu changes with the seasons to accommodate local produce, and daily specials are always available.

Wherever possible, the culinary team chooses organic, hormone-free and free range meats, and organic stone-ground flours and MSG and GMO free ingredients are guaranteed. Huckleberry even has private gardens, where much of its produce is actively cultivated, and bee hives and orchards, where fresh honey is produced and a variety of fruits, from citrus fruits to avocados and figs, are grown.

At Huckleberry, guests can enjoy breakfast, lunch, dinner and a traditional Bermudian afternoon tea service. Sure to delight the senses are the very popular shrimp and grits, homemade pasta, grilled Spanish octopus, or the signature chopped salad. At tea time, try the “Tipsy Tea”, which features a choice of specialty, tea-infused cocktails or champagne to accompany the traditional tea service.

And not to be missed is Beau’s bar, affectionately named after long-term team member Beau Robinson. After dedicating 50 years of service to Rosedon, Beau was considered the heart of the house and could often be found in any role that needed filling. He was known for his exquisite Bermuda Fish Chowder, his cheerful disposition, a great sense of humor and an always friendly, can-do attitude. Choose from a selection of delicious cocktails and relax at the bar, on the front porch or on the lawn. If you’re not sure what to order, try one of Huckleberry’s signature cocktails: the Rosedon, which includes Bacardi Facundo Eximo Rum, Grand Marnier, house made blood orange, rosebud syrup and lime, or the Vesper Martini, which includes Cotswolds Gin, Ketel One Vodka & Lillet Blanc Vermouth.
