Start popping bottles: New Year’s Eve is here! While champagne on its own is always a welcomed treat, champagne cocktails add festivity and sparkle to New Year’s Eve. Here are our 4 favourite recipes for champagne cocktails that you can make at home just in time for Midnight.
1. Raspberry Bellini
Ingredients:
1 bottle Champagne
1 punnet of raspberries
8 mint leaves
1/2 lemon
Vodka
Directions:
Place 5 berries in the bottom of your champagne glass
Add 2 mint leaves
Using a spoon, muddle raspberries until slightly mashed, but somewhat whole
Fill up glass with Champagne
Add a splash of vodka
Add a splash of lemon juice and enjoy!
2. Pear and Ginger-Sage
Ingredients:
1 cup honey
3 cups water
2 whole pears, peeled, cored and diced
1 large chunk of ginger, peeled and diced
20 fresh sage leaves + additional for garnish
1 bottle of your favorite champagne or sparkling wine
Directions:
In a saucepan combine honey and water over medium heat and bring to a light boil. Turn the heat down to low and simmer, stirring occasionally, until the honey has dissolved completely. Add the pears, ginger and sage leaves. Simmer until the mixture has reduced by 1/3 – about 15-20 minutes, stirring occasionally. Remove from heat and let the mixture steep for an additional 10 minutes.
Strain the syrup into a large mason jar. Discard the ginger and sage leaves.
To assemble the drinks place a few pieces of the cooked pear into each glass followed by 1-2 Tablespoons of the simple syrup. Add the champagne and enjoy.
3. Champagne and Grapefruit
Ingredients:
1/2 cup freshly squeezed grapefruit juice
5-6 sprigs fresh thyme (plus more for garnish)
1 Tablespoon honey
Chilled Champagne
Directions:
Tear the thyme leaves off the stem and add to a cocktail shaker with the grapefruit juice, honey and a handful of ice. Shake vigorously for about 15 seconds.
Strain evenly into two glasses and top with Champagne to taste. Stir gently if needed. Add a sprig of thyme for garnish. Serve and enjoy!
4. Clementine Champagne Cocktail
Ingredients:
1 oz. vodka
1 oz. freshly squeezed grapefruit juice
1 oz. freshly squeezed clementine juice
½ oz. simple syrup
4 oz. champagne or Prosecco
pomegranate seeds for garnish
Directions:
Make sure you strain the juice to remove any pulp.
In a cocktail glass mix, vodka, simple syrup and both juices.
Top off with champagne or Rrosecco and garnish with pomegranate seeds.
Serve cold
