Beets are one of the very best foods you can eat. Beets have anti-aging properties, cleanse the liver, protect against heart disease and strokes and the roots contain B vitamins along with many minerals including potassium, iron, manganese, copper and magnesium. In addition to the B vitamins, beets also contain vitamin A, C, E and K, which is why incorporating beets into your daily diet is so important.

Here are the ingredients you will need for 2 1/2 cups of hummus:

3 medium beets
1 can chickpeas, rinsed and drained
2 tablespoons tahini
2 garlic cloves, chopped
Juice of one lemon
1/3 cup extra virgin olive oil
Sea salt and pepper

Step 1: Preheat the oven to 400 degrees F.

Step 2: Peel and chop your beets into large chunks.

Step 3: Place chopped beets onto a roasting pan and drizzle with olive oil. Roast for 45 minutes or until tender.

Step 4: While your beets are roasting, start putting together your hummus. Start by rinsing your chickpeas. Next, dump them into a food processor and whiz until they turn into a soft paste.

Step 5: Add the tahini and chopped garlic and stir until blended.

Step 6: Add lemon juice.

Step 7: Take roasted beets out of the oven. Give them 10 minutes or so to cool down and then put them in the food processor and whiz until they look like this:

Step 8: Add the chopped roasted beets to your hummus and stir until blended. Add salt and pepper to taste.

Step 9: Spoon into bowl and serve with veggies and crackers.
