These Smoked Salmon Blinis can be ready in under 30 minutes and require only a few ingredients, making them the perfect canapé for any New Years Eve celebration.
Ingredients
(Makes two dozen)
1 cup of self-raising flour
1 large egg
1 tbsp oil
1 cup milk
1 tbsp unsalted butter
Pinch of salt
½ lb smoked salmon, sliced thinly
Crème fraîche or garlic & herb cream cheese
Fresh dill sprigs or chives (garnish)
Small cucumber, thinly sliced (optional)
Directions
In a bowl, combine flour and salt. Add large egg and oil and beat into flour. Slowly add milk until the mixture is smooth. Melt 1 tbsp butter in a non-stick pan and add blini batter to the pan in tablespoons. Cook for 1-2 minutes on each side, flipping when they begin to bubble and lightly brown. Let cool and assemble your cooked blinis on a serving platter, adding a slice of of smoked salmon, topped with crème fraîche or cream cheese. Garnish with a fresh sprig of dill or chives. You can also add a thin slice of cucumber before the salmon, if you wish.
