Loquat season is in full swing in Bermuda, bringing an abundance of these sweet-tart golden fruits. What better way to celebrate than with a refreshing loquat cocktail?


Serves 4

Ingredients :
15-20 loquats, depending on size
2 ounces fresh lime juice (adjust to taste)
8 dashes orange bitters
3 ounces elderflower liqueur (such as St-Germain)
8 ounces Goslings Silver Rum
Ice
4 small loquats, for garnish

Instructions:
Cut the loquats in half, removing and discarding the seeds.
Muddle the loquat halves and lime juice in the bottom of a cocktail shaker.
Add the bitters, elderflower liqueur, and rum. Fill the shaker with ice and shake vigorously.
Fine strain into four chilled cocktail glasses.
To garnish, cut a small slit into each loquat and perch on the rim of the glasses.

For a fizzy version, strain into ice-filled highball glasses, top with club soda, and garnish.
