As Laura Esquivel writes in Like Water for Chocolate, “Each person has to discover what will set off those explosions of joy inside of them. Hot chocolate happens to be one of mine.”
Ingredients:
2 cups milk (regular or non dairy)
2 tablespoons unsweetened cocoa powder
2 tablespoons sugar
1/4 teaspoon vanilla extract (can be omitted)
A pinch of salt
Marshmallows for garnish
Instructions:
In a small saucepan, combine the cocoa powder, sugar, and salt.
Add about 2 tablespoons of the milk and whisk until smooth, forming a thick paste.
Gradually add the remaining milk while continuing to whisk.
Heat the mixture over medium heat, stirring constantly until hot but not boiling.
Remove from heat and stir in the vanilla extract.
Pour into your mug, top with marshmallows and enjoy!
