There’s still time to squeeze in a few more long, lazy afternoons around the grill before the back-to-school routine kicks in. Make the most of the final days of summer with a backyard BBQ that keeps things simple: good food, cold drinks and plenty of time gathered around the table.

Honey-Lime BBQ Chicken
Ingredients:
Iceland chicken portions
¼ cup honey
¼ cup lime juice
3 tbsp soy sauce
2 tbsp olive oil
2 cloves garlic, minced
1 tsp smoked paprika
½ tsp black pepper
Salt to taste
Whisk together the honey, lime juice, soy sauce, olive oil, garlic, paprika and black pepper. Season the chicken lightly with salt and place it in a large dish or resealable bag. Pour over the marinade, making sure the chicken is well coated, and refrigerate for at least two hours, preferably overnight.
Preheat the grill to medium heat. Remove the chicken from the marinade and grill, turning regularly, until browned and cooked through. Brush with additional marinade during the first part of cooking, then discard any remaining marinade. Serve with grilled corn, and your favourite BBQ sides. Try dipping them in Sweet Chili Sauce!

Pork chops are another summer favourite, especially when they are given plenty of flavour before hitting the grill. Two Rivers Pork Loin Center Cut Chops are tender and easy to cook, making them a good choice for a smaller family BBQ.
Grilled Garlic-Herb Pork Chops
Ingredients:
Two Rivers pork loin center cut chops, boneless
3 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh lemon juice
1 tsp dried oregano
1 tsp dried thyme
½ tsp smoked paprika
Salt and black pepper
Combine the olive oil, garlic, lemon juice, oregano, thyme and paprika. Season the pork chops with salt and pepper, then coat thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, or up to four hours.
Heat the grill to medium-high. Grill the pork chops for several minutes on each side, turning once, until nicely charred and cooked through. Let them rest for five minutes before serving. Pair with potato salad or a crisp green salad.

Classic Grilled Ribeye
Ingredients:
Two Rivers beef ribeye lip-on steak
1 tbsp olive oil
1 tsp kosher salt
½ tsp freshly ground black pepper
1 clove garlic, crushed
1 sprig fresh rosemary
1 tbsp butter
Take the steak out of the refrigerator about 30 minutes before grilling. Pat it dry and rub with olive oil, salt and pepper.
Heat the grill until very hot. Place the steak directly over the heat and grill for approximately 3–4 minutes per side for medium-rare, adjusting the cooking time depending on thickness and preferred doneness. During the final minute, add the butter, garlic and rosemary to the grill or a small pan and baste the steak with the melted butter.
Transfer the steak to a plate and let it rest for at least five minutes before slicing. Serve simply with a baked potato or a pile of fresh summer vegetables.
